Introduction

Lots of fresh veggies... Lots of fresh veggies...

Ingredients

    Olive Oil
    2 cloves garlic, minced or sliced
    3 fresh basil leaves, chopped
    3 Tbsp raw onions, I prefer red, chopped
    1/4 cup chopped red bell pepper
    1/4 cup sliced zucchini
    1/4 cup strained garbanzo beans (chick peas)
    1/4 cup chopped tomato
    3 jumbo sliced olives
    2 large mushrooms sliced
    Parmesean cheese to garnish (1/2 Tbsp)
    56 grams (2oz.) spaghetti, cooked


Directions

Heat olive oil in a skillet over medium heat. Add garlic and basil and sautee for about a minute. Add red peppers, onions, garbanzo beans, and zucchini and sautee for 1-2 minutes. Add mushrooms, tomatoes and olives and sautee until veggies are somewhat soft or to your taste.

Place over warm spaghetti and garnish with parmesean cheese (optional)! Enjoy!
