Introduction

This is a nice, easy, healthy and filling twist on classic chicken parmesan. Ingredients

    1 tsp. olive oil
    cooking spray
    2 cloves garlic, minced
    1 cup sliced fresh mushrooms
    3/4 cup chopped onion (I like Vidalia)
    1 cup Tomato/Basil Spaghetti Sauce (I like Classico)
    1 pound boneless, skinless chicken breasts, cut into strips
    4 Tbsp. grated parmesan cheese (romano or asiago are good too)
    2 oz. part-skim mozzarella cheese, cut into small cubes
    Salt, pepper and/or italian seasoning to taste (not included in nutrition calculation)

Directions

(1) Heat a large skillet under med heat
(2) Spray with cooking spray and add the olive oil
(3) Saute garlic and onions until tender
(4) Add mushrooms and saute until soft and tender
(5) Season with salt/pepper/italian seasoning to taste
(6) Add chicken to skillet and cook until no longer pink
(7) Add tomato sauce and turn down heat to low
(8) Stir contents of skillet and cook until sauce is hot
(9) Stir in parmesan cheese
(10) Stir in mozzarella cheese cubes
(11) Cover skillet with a lid and let mixture simmer until mozz cheese is melted

Enjoy! Makes 3 LARGE servings, each with close to 45 grams of protein!
