Ingredients

300 grams Spinach, fresh
.25 cup, chopped Onions, raw
1 cup (not packed) Cottage Cheese, 2% Milkfat
.5 cup Milk, 1%
1 cup, shredded Cheddar Cheese
3 large Egg, fresh, whole, raw
0.33 cup Bob's Red Mill Organic Spelt Flour (1 serving = 0.25 c or 30 g) (by DS1222)
1 tsp Baking Powder
.33 tbsp Basil
.25 tsp Nutmeg, ground
.5 tsp Salt
1 tsp Pepper, black
Directions
1. In a bowl, mix spinach, onion, cottage cheese and shredded cheese. Let stand.
2. In another bowl beat eggs well, add milk and beat until combined.
3. In a third bowl, combine baking powder, flour, basil, nutmeg, salt and pepper. Add to egg mixture and beat for 1 minute.
4. Add egg/dry ingredients mixture to spinach mixture and mix well. Slice tomato on top (optional).
5. Pour into greased pie plate. Bake at 350 degrees for 45 minutes or until slightly brown on edges and firm in the middle. Let stand 5 minutes before serving. Enjoy!
