Introduction
This is great for a crowd - all of the flavors and they don't miss the masses of cheese usually used in the traditional dish! The carbs LOOK high but the fiber is really what makes up the bulk of that number. Ingredients

1 large onion, chopped
8 garlic gloves (or more), chopped
1 large stalk celery, diced
1 red bell pepper, diced
3.5 cups prepared salsa
1 tsp ground cumin
2 tsp chili powder
2 (19 oz.) cans black beans
16 oz. chicken breasts, shredded
2 cups frozen corn kernels
9 whole wheat low carb tortillas
6 slices (more if you like) fat-free american cheese singles, torn into strips
Directions
Preheat Oven to 350.
Spray a large non-stick frying pan with Pam, and add onion, garlic, celery and red bell pepper cooking until tender and onions are translucent.
Add salsa, cumin, chili power, and corn and heat through.
Spoon a quarter of the mixture into a 9x13 sprayed casserole dish.
Arrange 3 tortillas in a triangle to get maximum coverage and spoon another quarter of the mixture on top. Add 1/3 of the shredded chicken and 2 slices of the cheese. Repeat this layering 2 more times.
Bake in the oven, uncovered, approximately 30-40 minutes until heated through and getting crispy on top.
