Ingredients

1 1/2 c flour
1 Tbsp sugar
1 1/4 tsp active dry yeast
1/4 tsp coarse salt
3/4 c warm water
1 Tbsp Olive Oil
1/3 c yellow cornmeal
Additional cornmeal
1 1/2 c mexican cheese blend
1 1/2 c shredded cooked chicken breast
1 can (14/5 oz) fire roasted diced tomatoes
1/2 med yellow bell pepper (1/2 c)
1/4 c sliced green onions (4 med)
1/4 c chopped fresh cilantro
Directions
Preheat oven to 450.
In med bowl stir 3/4 c flour, the sugar, yeast and sald. Stir in warm water and oil. Beat with electric mixer on low speed 30 sec. Beat on high speed 1 min. Stir in 1/3 c cornmeal and remailing 3/4 c flour to make a soft dough. On a lightly floured surface, kean dough until smooth and elastic, about 5 mins. Cover and let rest 10 mins.
Spray a large cookie sheet with cooking spray, sprinkle with additional cornmeal. Press dough into 14x10 inch rectangle on cookie sheet, prick with a fork. Bake 8-10 mins or until edges just begin to turn brown. Sprinkle with 1/2 c cheese. Top with chicken, tomatoes and peppers. Sprinkle with remaining cheese. Bake 6-8 mins longer until cheese is melted and edges are golden brown. Sprinkle with green onions and cilantro.
