Tips
Serve with mashed cauliflower or sweet potatoes. Top with a low-fat tomato sauce.
Directions
Preheat oven to 350 Degrees F for 15 minutes. Put vegetable broth into a sauce pan an warm on stove top on low heat. Put all chopped vegetables in a microwavable bowl. Cook on high for 6-12 minutes or until softened, do not drain. The juices will add flavor to the meat. Stir until cooled down enough to handle.
In a large bowl, mix everything, except the vegetable broth, until combined.
Spray a large rectangular baking pan with Pam. Drop mixture into pan. Shape into a rectangular loaf. It will flatten a little. That's fine. It's a soft mix. Pour 1 cup vegetable broth over loaf. Cover with aluminum foil. Bake for 45 minutes. Remove aluminum foil. Add remaining broth. Lower temperature to 325 degrees. Bake for another 30-45 minutes or until the top of the loaf is firm to the touch. Remove from oven. Cool completely on the top of the stove. Cut lengthwise in half. Cut each half into 2 inch slices. Yields 16 slices. Store leftovers in broth.
