Introduction

Very quick to make and tastes just like your local chinese restaurant. The finshed dish should not be too runny, the ideal finnished dish should have almost no sauce and the meat and veggies should be well galzed with a slightly runny coating. Ingredients

    175gms Pork, fresh, loin, separable lean only, raw thinly sliced into approx 1.5 inch pieces.
    1 tbsp Peanut Oil
    1 1tsp Peanut Oil for marinade
    1 tsp Shouxing Rice Wine
    1 tsp dark Soy Sauce
    1 serving 1 Med. Green Bell Pepper
    1/2 teaspoon of Sechuan pepper
    25ml Hoisin Sauce
    2 cloves Minced Garlic
    1/2 tsp finely chopped fresh ginger
    90 grams broccoli florets
    90 grams Onions chopped to same size as pork
    A cup of water, for cooling pan and stopping ingredients burning.

Tips

The calorie count does not include the sechuan pepper because I couldn't find it on the site.
Ensure all ingredients are prepared and ready to hand before any cooking starts. The wok should be prewarmed before adding the oil and it should be kept on a hot 'stir frying' heat throughout the cooking.
Preperation time is around 20 minutes with and extra hour for the marinating.
If you enjoy a bit of chilli heat with your chinese just throw in a finely chopped birds eye chilli at the same time as the sechuan pepper.


Directions

Combine shouxing, dark soy and 1 tsp of peanut oil in a bowl just big enough to take the sliced pork. Then add the pork and stir through. Leave to marinade for around an hour.
Chop green pepper and onion into roughly the same size as the pork.
Ensure you have all the other ingredients at hand ready to throw in the wok.
When ready to start cooking put your wok on the stove and turn the heat up to high. As soon as the pan is warm pour in the 1 tbsp of peanut oil and swirl it around the wok so that it is well coated.
Wait for the pan and oil to become very hot and then throw in the green peppers. Stir them around for 2 minutes then add the the onions. Continue to stir fry for 1 minute then add the garlic, ginger and the sechuan pepper. Stir fry again for 1 minute. At this point you may need to add a tbsp of water to stop the ingredients from burning but be carefull as this will instantly turn to steam!Now throw in the broccoli and stir through then throw in all the marinating pork and any liquid left in the bowl. Stir fry for 3 minutes ensuring the pork is cooked through. Again here you may need to add little bits of water every now and then, but not so much as it stops frying and starts steaming/boiling.
Finally add in the hoisin sauce stir through, still on high heat for 1 minute and then turn of the heat and serve immediately with plain rice and possibly a second dish such as Chinese sweet chilli and ginger King prawns.
