Introduction

A healthier alternative to regular blueberry muffins. A healthier alternative to regular blueberry muffins.
Number of Servings: 12

Ingredients

    Combine:
    1 c. Flour
    1/3 c. Sugar
    1/4 tsp. Salt
    2 tsp. Baking Powder
    1/2 c. Wheat Germ
    1/4 c. Wheat Bran
    1/4 c. (or 4 tbsp.) of Flax Seeds or Flax Meal
    Mix Well.
    Add:
    2 Egg Whites
    3/4 c. Skim Milk
    1/4 c. Canola Oil
    Mix until dry ingredients are just moistened.
    DO NOT OVER MIX - muffins will get tough.
    Fold in 1 1/2 c. Bluberries (frozen or fresh)

Directions

Spray 12 muffin tins with Cooking Spray or use muffin cups.
Put batter into cups and bake.

Apx. 18 Minutes at 400'F
