Introduction

Ingredients

    1 12 oz can of Pumpkin without salt
    2/3 cup Steel Cut Oats, dry
    2 cup (8 fl oz) Water
    4.25 cup 100% liquid egg whites (equivalent to 6 large eggs)
    1.5 tbsp (not packed) Raisins (optional)
    2 tbsp unpacked Brown Sugar (or use 3 tbsp splenda brown sugar)
    1.5 tsp Splenda Brown Sugar Blend
    1 tbsp Cinnamon, ground
    1/4 tsp Nutmeg, ground
    1/4 tsp Allspice

Tips

You can serve with fresh blueberries, add chopped nuts (pecans or almonds) or other dried fruit if you prefer.


Directions

add oats and water to a deep microwave safe bowl. Cook according to package directions (I cook at 70% power for 10 - 12 minutes) until desired tenderness. While the oats are cooking fold egg whites into pumpkin in a bowl. Add remaining ingredients until blended. Heat oven to 425. allow oats to cool slightly. Mix in pumpkin egg mixture and blend to combine. Spray 2 oven safe dishes with cooking spray. Bake at 425 until a knife inserted comes out clean, about 3 minutes.
