Ingredients

    3.5 cup, cubes Sweet potato
    1 tsp Vanilla Extract
    1 tbsp Nutiva organic extra virgin coconut oil
    Salt & Pepper to taste

Directions

Boil sweet potato cubes until soft, about 10 minutes. Drain. Add coconut oil and mash with a potato masher. Add Vanilla extract and stir in until well mixed. Add salt and pepper to taste.

Serving Size: Makes 3 servings approximately 1 cup each
