Tips
These are good for any occasion.
*NOTE They are fried. I do not recommend eating friend foods if rying to lose weight though some people will enjoy a treat every now and again of something friend. If you can find an healthier way of frying these then by all means then cook them the way you find healthier for you. Perhaps they can be baked or even lightly fried in some zero calorie cooking spray, coconut oil, etc..
Directions
Grate cabbage, carrots and onion*(Optional) In a food processor if you have one. Cook boneless breast of chicken and cut up into tiny peices or seperate a breast tearing it into strips if you prefer. About 1oz of Chicken per roll. Place Egg Roll Wrapper down in front of you so your looking down at a diamond. Make sure you have your points in the center at the left and right and top and bottom. Add your veggies 1st in the middle, flatten down to easily add cheese, then chicken and then sauce. (alternatively; you may choose to mix all ingredients together and then just spoon into middle and then fold the sides in 1st From left and right into center and wet them if you need so they will hold. Then from the bottom V up roll until you have the last corner on the top and if you wet it with a little water you will seal it when you flip it back closing the roll and making your 1st egg roll. Now do that with the next 5 rolls.
In a pan with canola or other non-flavored oil add enough oil to fry the egg rolls. Heat oil to a medium temperature and add in 2 rolls at a time cooking about 1 minute on each side until nicely browned but not burned. Be careful with this step because not all stove tops are the same. You can easily burn the rolls if not careful.
Remove from hot oil to a grid to drain any excess oils from cooking. Then pat the res of the unwanted oils from the rolls with paper towels and serve. You can choose to add more sauce but since its inside the rolls you shouldn't need any.
These taste good hot, warm or cold.
Can eat as a side appetizer though I found 2 of them to be quite filling as a meal just by themselves.
Serving Size: Makes 6 Egg Rolls
