Ingredients

    2 cup dry Instant Oatmeal (plain)
    3/4 cup Wheat flour, white, all-purpose, unenriched
    1 1/2 tsp Baking Powder
    1 1/2 tsp Cinnamon, ground
    1/8 tsp Salt
    2 TBSP Brummel & Brown, Original Spread made with Yogurt or Coconut Oil (nutritional facts with yogurt spread)
    1 Large Egg
    1/2 cup Honey or Agave
    1 1/3 cup Applesauce, unsweetened
    1 tsp Vanilla Extract
    1/2 cup (not packed) Raisins
    3 serving Orgain - creamy chocolate fudge (by BRIANNAC1205)

Directions

Mix together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk egg then whisk together the coconut oil or butter,applesauce, and vanilla. Stir in the agave. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Chill for 30 minutes.
Preheat the oven to 325°F, and line a baking sheet with parchment paper or a silicone baking mat.
Drop the cookie dough into 30 rounded scoops onto the prepared sheet, and flatten slightly. Bake at 325°F for 11-14 minutes. Cool on the pan for 10 minutes before turning out onto a wire rack.

Serving Size: Makes 30 - 1 1/2 to 2 inch cookies
