Ingredients

    3.0 cup, chopped Carrots, raw
    1.0 cup, chopped Kale
    1.0 cup, chopped Onions, raw
    2.0 cup Imagine Organic Vegetable Broth
    2.0 cup Lentils
    3.0 serving Beans, Kidney beans dark red 3 serv can
    2.0 tsp Lea & Perkins worchestershire sauce
    1.0 tsp Cumin - ground (1 tsp)

Tips

This recipe is very easy to convert to a crockpot. Just soak the lentils while you chop the vegetables, then put everything into the crockpot the night before. Set the crockpot to medium for 8 hours (or high for 4), then add the kale one hour before serving with the crockpot still set to high.


Directions

Soak lentils.
Saute onions.
Add diced carrots.
Add cumin, salt, worchestershire sauce.
Add vegetable broth.
Add diced kale.
Add water.

Simmer for 15 minutes.

Drain lentils and add to pot. Add water to desired consistency. Cover pot with lid and simmer for 50 minutes until lentils are tender.

Serving Size: 10 1 cup servings
