Number of Servings: 6

Ingredients

    1 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
    1 tbsp chopped Shallots
    8 oz Pork Sausage, fresh, bulk, cooked
    12 serving Egg - Large (1 egg)

Tips

Baked eggs tend to stick to the pan. Make sure you use a good non stick pan to bake in.


Directions

Cook sausage, breaking into small pieces. Drain on paper towel.
Break eggs into bowl, add 1/8 C. water and whisk.
Finely chop small shallot and add to eggs.
Chop bell pepper, any color, and add to eggs.
Add drained sausage and stir all ingredients together.
Salt and pepper to taste.
Preheat oven to 350°. Add egg mixture to 9x13 non stick baking pan. Bake 15-20 minutes. Middle should be set before removing from oven. Cut into squares and enjoy.
