Ingredients

2 cup Rice Noodles
1 cup, chopped or diced Broccoli, fresh
1 cup, chopped Carrots, raw
1 cup, diced Celery, raw
3 tsp Better than Bouillon
4 cup (8 fl oz) Water, tap
4 more cups of water for the noodles
1 serving Curry, Bisto Chip SHop granules per 10g Dry (by SKIPPY1311)
1.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
2 dash Pepper, black
4 tbsp Curry powder
6 oz Shrimp, cooked
Tips
*To reduce the salt, leave out Bisto and add additional spices, to taste.
*To make this meal vegan, simply leave out the shrimp. Fried tofu chunks and edamame also work well in this recipe.
Directions
1. Place rice noodles in a bowl with boiling water to soften for 10 minutes.
2. Boil water, Better Than Bouillon, Bisto, vegetables and spices.
3. Reduce to simmer and allow to simmer for at least 15 minutes.
4. Add coconut milk and shrimp, allow to simmer for 10 minutes.
5. Add pepper to taste.
Serving Size: makes 3 bowls of soupy goodness
