Introduction

Good use for those "not so pretty anymore" bananas. You prob don't need as many bananas! I used whole white wheat flour I got in bulk at Winco, so the flour is not too heavy. Ingredients

    1.0 large Egg, fresh, whole, raw
    2.0 tbsp Coconut Oil
    2.0 small (2-1/2" dia) (approx 4 per lb) Apples, fresh with skin
    4.0 small (6" to 6-7/8" long) Banana, fresh
    1.5 tsp Baking Powder
    1.5 cup Whole Wheat Flour
    0.5 cup oat flour (1/3 cup)
    4.0 tbsp Maple Syrup

Directions

Bake at 350° in muffin tins until you can smell them and middle springs back. Approx 15? min Serving Size: Made 20 muffins, filled about 1/4-1\3 full
