Ingredients

1 tbsp Olive Oil
16 oz Chicken Breast Boneless Skinless
3 cup, sliced Zucchini
2 cup Heart Smart Bisquick (mix only)
.5 cup Parmasan Cheese (shredded)
3 tbsp Basil
.66 cup Milk, 1%
0.75 cup Alfredo Sauce
1 cup, chopped Tomatoes
Tips
Serve with a light salad.
Directions
Heat oven to 400F. In a 12-inch ovenproof skillet, heat oil over medium high heat. Cut chicken into 1-inch cubes. Add chicken and zuchini to hot pan. Cook 5-7 minutes stirring occasionally unti chicken is no longer pink.
Meanwhile, in medium bowl, stir together Bisquick, parmasan cheese, 2 tablespoons of rchopped basil and the milk until soft dough forms.
Stir Alfredo sauce into the chicken mixture. Move mixture toward the center of the skillet. Drop 12 heaping tablespoons of doug all around the edge of the skillet.
Bake 8-10 minutes or until biscuits are slightly brown. Spoon tomatoes over chicken mixture. Sprinkle with remaining basil. Put back into oven for 3-5 minutes to warm tomatoes and cook biscuits golden. Serve.
