Ingredients

    1.0 cup, chopped Onions, raw
    1.0 cup, sliced Zucchini
    1.0 cup, chopped Carrots, raw
    1.0 cup Lentils
    1.0 cup, pieces or slices Mushrooms, fresh
    0.5 cup, sliced Fennel
    1.0 tbsp (C) Vinegar, Red Wine (Gr Value)
    2.0 cup Canned Tomatoes
    1.0 tsp Paprika
    1.0 tbsp Basil
    2.0 1tsp Sunflower Oil
    4.0 clove Garlic
    1.0 cup, chopped Peppers, sweet, red, fresh

Directions

Cook onions, fennel and carrot gently in oil until softened. Add mushrooms, pepper (Romano works well), zucchini and garlic and cook for a few minutes. Add lentils, tomatoes, red wine vinegar and paprika (smoked). Stir and bring to the boil. Reduce heat and simmer gently for 20-30 minutes. Add a little water if necessary. Gently stir in a handful of torn fresh basil leaves before serving if you like. Serve with wholemeal pasta and/or a green salad.
