Introduction

Ingredients

    900 grams Beef liver
    688 grams Pork, fresh, ground, raw
    3.53 oz Turkey, Ground turkey, 93% lean
    113 gram(s) 88/12 Ground Beef Kirkland Signature SS 4 oz - 113 grams
    4 serving Bread Walmart Wheat Roll
    170 grams Onions, raw
    4 large Egg, fresh, whole, raw
    1 cup Bread crumbs, dry, grated, plain
    20 sprigs Parsley
    1 tsp Pepper, black
    1 tsp Nutmeg, ground
    3 ltrs Meat Broth

Directions

grind liver unless you can buy ground liver somewhere.
Cut the day old Rolls into pieces and soak in hot water. Chop Parsley and Onion, transfer the soaked rolls into a colander and press out the liquid.
In a big bowl combine Liver, Ground Meats, Rolls, Eggs Onions and Parsley. Mix well. Now add the seasonings adjusting as necessary.
Add Bread Crumbs little by little until you are able to form Knödel (Balls). Add a little bit Flour as needed.
In a big Pot heat at least 3 ltrs of Broth. Add formed Knödel and heat at low temperature until they rise to the top.
Serve with browned Onions, Sauerkraut and Mashes Potatoes or a slice of Rye Bread.
