    2 1/2 cups white flour
    1 cup no calorie Splenda
    1/3 cup brown sugar Splenda
    1 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    3 tsp cinnamon
    1/4 cup Canola oil
    3/4 cup applesauce
    2 cups grated zucchini
    3 medium eggs
    1 tsp vanilla


Mix dry ingredients together add the rest and mix well. Put in two greased and floured loaf pans. Bake for 3/4 hour at 350 degrees or until done. Cut each loaf in 10 slices.

  • What size pans do you use? I tried two 9 1/4 x 5 1/8 loaf pans and the dough was way too little in each, so I combined in one pan and it came out well. - 12/5/13
