Lemon Garlic Chicken

4 4 oz boneless, skinless chicken breast
.25 cup Flour, white
1 tbsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 cup Low Sodium Chicken Stock
1 Lemon, juice of one whole lemon and the zest
15 Green Olives, roughly chopped
Salt and Pepper to taste
If the sauce is not think enough you can mix 2 tsp of flour with 3 tbsp of cold water. Mix well so there are no lumps them add to the sauce and stir well.
Also this recipe is great for parties because you can make it is large quantities and hold it over in a warming try without it drying out.
Heat oil on medium and saute the chicken 5 min on each side.
Add garlic and chicken stock to the pan, scrape any bits fro the bottom of the pan (aka flavor bits) and simmer for 5-10 min while the sauce thickens (should coat the back of a spoon).
Add the lemon juice, zest and olives. Stir well and season with salt and pepper to taste.
Serving Size: Makes 4 - 4oz portions
