Ingredients

    1 Box (1 oz) Jello Sugar Free - Fat Free Instant Pudding, Cheesecake
    1 1/2 Cup 2% Milk
    1 Can (15 oz) Solid Pack Pumpkin (not pumpkin pie filling)
    Pumpkin Pie Spice to taste

Directions

Mix the Cheesecake flavored pudding with the milk. Stir in the whole can of pumpkin and spice to flavor. Refrigerate until ready to serve.

Makes 4 servings, 3/4 cup each.

    I made this this weekend, and it warms the cockles of my heart knowing I'm eating mostly pumpkin which is incredibly good for you, AND that something this healthy could taste so decadent... I think it tastes heavenly. A little squirt from a can of Rediwhip, and voila! Perfect dessert or snack. - 2/1/10

    In a word, YUMMY. My husband had asked that I make him a cheesecake on which he could put pie filling. Doing such a thing is a real temptation to me. So I made this first, for myself, and now I have something good and healthy to eat myself. - 9/13/09
