Ingredients

    Extra Virgin Olive Oil, 3 tbsp
    2 Boneless Chicken Breasts, chopped into bite-size pieces
    Black Pepper
    1 Large red onion, thinly sliced
    3 Cloves Garlic, chopped
    1 28-oz can crushed tomatoes
    4 cups Chicken Broth - Low Sodium
    Red Pepper Flakes, to taste

Directions

Brown chicken in olive oil, season with black pepper. Add pepper flakes, onion and garlic, heat until onions are soft. Stir in tomatoes and chicken broth, cook until heated through. Top with grated parmesan cheese if desired (not included in nutrition info)

    I had 2.5 breasts of leftover grilled chicken so I made this soup with it - yum! Sprinkled mozzarella with the parmesan on the top. Will make again. - 12/15/08
