Ingredients

    1/4 cup flax seed meal
    1/2 tsp baking powder
    1 tsp splenda
    1 tsp cinnamon
    1/4 cup egg substitute
    1/2 tsp butter (1 tsp was the recommendation, I halved it)

Directions

Mix the dry stuff together in a coffee cup, then add the egg and the oil and mix.

Nuke for 50 to 60 seconds and upend the cup

    This recipe is fun. I did switch 1/2 the flax meal with wheat flour. I would also let people know that options could be use corn meal, bran flakes and they could also add berries. I would make this again trying other options - 2/24/08

    Very Good
    This was really good, I used milled flax seed and a whole egg,it was so yummy! Very light and fluffy!I will make this again, thanks for sharing! - 8/26/11

    Very Good
    replaced egg sub w/ 2 egg whites, only used 1/4 c. ground flaxseed, replaced oil w/cooking spray and coated cup before pouring ingredients. Very similar to bran muffin. Will prob add pnut butter or raisins next time to add more flavor. Thanks for the recipe! - 4/23/08
