Introduction

Ingredients

1 c white flour
3/4 c whole wheat flour
1 c sugar
1/2 c brown sugar, packed
2 eggs, or I used Ener-g egg substitute
1/2 tsp baking soda
1 tsp cinnamon
3 tbsp butter
1 tbsp canola oil
2 ripe bananas, mashed
1/4 c buttermilk, or I used 1/4 cup lite vanilla soy milk plus 1/4 tsp apple cider vinegar
1 c chopped black walnuts
Directions
Add flour and baking soda in a medium bowl, sat aside.
In another bowl mix butter, oil, and sugar. Beat with mixer until fluffy (3 minutes)
add eggs (or substitute), one at a time, and beat until mixed. Add bananas, cinnamon, buttermilk (or substitute) and beat well.
Add flour mixture and mix until everything is blended. Add 3/4 of the walnuts, mix
Pour in bread pan, cake pan, or cupcake pans and sprinkle the rest of the walnuts on top- use more if needed. I used a regular bread pan.
Bake at 350 for 20-25 minutes, depending on pan (shallow cake pans will take less time!). Toothpick test will tell you when it is done.
Enjoy!
