8 large eggs
3 oz low fat Feta cheese
1 tablespoon Fleishmans olive oil spread
3 cups Baby Spinach (raw)
1 tsp Onion powder
1/2 tsp Lite Salt
1 tsp black pepper
Directions
Whisk the eggs, and stir in feta, salt, pepper and onion powder in a large bowl thoroughly combined. Set aside.
Heat the butter in a large skillet over medium heat. Add the spinach and cook until wilted - about 4-5 minutes.
Add the spinach to the egg mixture and stir until combined.
Heat the skillet to medium low and add the entire mixture. Stir occasionally until the eggs have reached your desired doneness.
