Introduction

Serving Size- 2 cups stew & 0.5 cup cooked couscous Serving Size- 2 cups stew & 0.5 cup cooked couscous

Ingredients

    1tsp olive oil
    4 chicken breasts cut in cubes
    1tbls ginger
    2 cloves garlic
    1 cup chopped onion & red pepper
    1 tsp coriander & curry powder
    0.5 tsp cumin
    0.25 tsp cinnamon
    1.5 cup chicken broth
    3 cups peeled yams
    1 cup ww cous cous
    2 tbls frozen oj concentrate
    .75 cup light coconut milk
    2tbls cornstarch

Directions

Heat the first 4 ingrediants over medium high. Add onion and red pepper- cook for 3 minutes
Stir in spices- cook 1 minute
Add broth and yams- boil
Reduce heat to med low- cover and cook for 12 min
Add coconut milk and cornstarch. Increase heat to med high and cook unitl bubbly
Cook coucous with the oj
