Ingredients

1 cup (250 mL) dried red lentils
3 cups (750 mL) water
0.5 Tbsp olive oil
1 carrot, diced
1 large onion, diced
2 celery stalks, diced
0.5 (7.5 mL) tsp salt (or to taste)
1 Tbsp (15 mL) cumin (or to taste)
1 tsp (5 mL) chili powder (or to taste)
1 tsp (5 mL) Lemon Juice
Tips
You can add a drizzle of olive oil or some yogurt to the finished soup. You can also add a bit more water if you want a thinner soup.
Directions
1. Rinse the lentils and dice the vegetables.
2. Heat up a soup pan, add oil and sautee the vegetables until the onions begin to become transparent.
3. Add the lentils, water and salt. Bring to a boil.
4. While the lentils are boiling, skim the foam that forms off the top of the soup. Once the foam stops forming add the other spices and lemon juice. Add more water as desired.
5. Cook until the lentils are done and the vegetables are tender.
