Ingredients

Soy milk, 1.5 cup
*Lemon Juice, 2 Tbsp
*White, all purpose flour, 1.5 cup
*Whole Wheat Flour, 1 cup
Yellow Cornmeal, .5 cup
Brown Sugar, .25 cup, packed
Salt, .5 tsp
Walnuts, .5 cup, chopped
Raisins, .5 cup (not packed)
Blackstrap Molasses, 0.5 cups
Directions
Preheat the oven to 350F. Lightly oil a 9x5" loaf pan. Pour the soy milk into a small bowl. Add the lemon juice and set aside for 5 minutes to give bubbles a chance to form.
In a large bowl, stir together the all purpose flour, whole wheat flour, cornmeal, brown sugar, baking soda, salt, walnuts, raisins and lemon zest.
Add the soy milk mixture and molasses to the flour mixture and stir just to combine. Pour the batter into the loaf pan and bake for 40-45 minutes, until the loaf is firm and a knife or toothpick inserted into the center comes out clean. Cool the bread iin the pan for 15 minutes and then remove from the pan, slice and serve warm. Let the bread cool completely before wrapping for storage.
**Before you measure the molasses, lightly oil the measuring cup, and the molasses will slide out easily.
