Introduction

Ingredients

    1 can (13 oz.) Chicken Breast in water (I used Member's Mark Premium Chunk Chicken Breast in Water) ***You could also use 2 cups cut up or shredded, cooked chicken meat (may change nutritional values)

    1 cup brown rice
    1 can Mandarin Oranges (11 oz.) drained, reserve 1/4 cup juice
    1/2 cup chicken broth, 98% fat free and reduced sodium
    2 Tablespoons honey
    2 Tablespoons soy sauce, reduced sodium
    1 Tablespoon cornstarch
    1/4 teaspoon ground ginger
    1 Tablespoon sesame oil
    1 onion, cut into wedges
    2 cloves garlic, finely chopped
    1 box frozen broccoli florets, (10 oz.) thawed and drained

Directions

1. Cook rice according to package directions.

2. Meanwhile, in medium bowl, whisk together reserved orange juice, broth, honey, soy sauce, cornstarch and ginger; set aside.

3. In large nonstick skillet, heat oil over medium-high heat and cook onion, stirring occasionally, 4 minutes. Add garlic and cook, stirring constantly, 1 minute. Stir in 2 cups cooked chicken meat, broccoli and broth mixture.

4. Reduce heat to medium: cover and cook 5 minutes or until heated through. Stir in oranges and serve over hot rice.

Makes 4 Servings.
