Introduction

My favorite summer salad. It tastes fresh and sweet. It is even worth keeping the leftovers for lunch the next day--since the dressing is not verry heavy. My favorite summer salad. Number of Servings: 8

Ingredients

    12 oz. Fresh spinach
    2 tbsp sesame seeds
    1/4 cup safflower oil (or extra virgin olive oil)
    2 tbsp salad vinegar
    1 - 2 tbsp sugar (recipe cal. calulated with 2)
    2 tbsp minced green onions
    1 tsp salt
    dash pepper
    dash tabasco sauce
    1 pint strawberries, sliced

Directions

Wash, trim and dry spinach; refrigerate. Toast sesame seeds on pie pan in a preheated 350 oven, shaking once or twice until golden 10-12 minutes; cool.
Combine oil, vinegar, sugar, onions, salt, pepper, and tabasco sauce in tightly covered container; shake until sugar and salt are dissolved. Refrigerate.
To serve: Tear spinach into bite-sze pieces; combine with sesame seeds in salad bowl. Toss with dressing; gently toss in strawberries. 8 servings
