1.25 cup Flour - Gold medal all purpose flour
0.5 cup Quaker Oats Old-Fashioned Rolled Oats
1 tsp Baking Powder
.25 tsp Baking Soda
.5 tsp Salt
6 tbsp Butter, unsalted
.75 cup Granulated Sugar
2 large Egg, fresh, whole, raw
.66 cup Buttermilk, lowfat
2 tsp Vanilla Extract
2 cup Blueberries, fresh
Directions
Preheat the oven to 350 with rack in the middle. Grease a 9x9-inch pan.
In a medium bowl,whisk together flour through lemon zest in the ingredients list.
Beat the butter and sugar on medium-high speed until lightened. Add the eggs one at a time; beat until fluffy. Mix in the flour mixture in 3 additions, alternating with the buttermilk. Add the vanilla. Fold in half the blueberries.
Spread batter in prepared pan. Scatter with remaining blueberries and sprinkle with sugar if desired. Bake 40 minutes.
