Introduction

Ingredients

    4 cup Great Value Instant Brown Rice
    4 cup (8 fl oz) Water, tap
    2 tbsp Extra Virgin Olive Oil
    1 Onion, chopped
    2 Green Peppers (bell peppers), chopped
    1 tsp Ginger, ground
    6 tbl Water, tap
    1 lb Chicken Breast (cooked), no skin, cut into bite size pieces
    4 large Eggs
    5 tbsp Great Value - Low Sodium Soy Sauce
    4 medium (4-1/8" long) Scallions, raw
    1 can Peas no salt added
    4 medium Carrots, peeled and shredded

Directions

Add rice, salt and water to a pot, stir once, and bring to a boil over high heat. Reduce heat to low and cover. Allow to cook, untouched for 5 minutes or until tender and liquid is absorbed. Remove from heat and let stand for 5 minutes, covered. Refrigerate rice until cold.
Add olive oil to a wok or large non stick skillet. Over medium heat add chicken, onions, bell pepper, peas, carrots and ginger; cook for about 5 minutes until onions are translucent and chicken is mostly cooked through. Add cooked rice and 6 tablespoons water and increase heat to medium-high.
Push rice to one side and add beaten eggs to the other side, scramble quickly then toss in with the rice mixture. Stir in the soy sauce. Remove from heat and toss i the green onions. Enjoy!
