Introduction

Dried blueberries make these pancakes extra sweet. I use 3 tbsp of sugar but I like mine extra sweet, but feel free to reduce the sugar. Ingredients

    1/2 cup white flour
    1/4 cup whole wheat flour
    1/4 cup millet flour
    1/4 cup rolled oats
    1/4 cup vital wheat gluten
    1/4 cup wheat germ
    3 tbsp sugar
    3/4 tsp baking powder
    1 tsp vanilla extract
    1/4 cup safflower oil (or vegetable oil)
    1/2 cup milk
    1 cup of water
    1/2 cup dried blueberries

Directions

Combine all dry ingredients in a medium sized bowl and whisk together to blend.
Add the wet ingredients and mix throughly. Fold in blueberries.
Heat a griddle or pan over med-hi heat and spoon 1/4 cup of batter into pan.
Makes 12 pancakes.
