Ingredients

    8 Corn Starch
    0.75 serving Natura fortified almond beverage, unsweetened 1c. (250ml)
    1.5 tsp Granulated Sugar
    .5 tbsp Fry’s Cocoa

Tips

Vegan/lactose free and low sugar. This is a dark chocolatey pudding, not very sweet. You can change the amount of sugar or use a substitute (I have not tested that) if your tastes run sweeter than mine.


Directions

In a separate bowl or cup, blend well the cornstarch and 2 Tbsp of the almond milk. Reserve.
In a medium saucepan, blend cocoa powder and sugar. Add a little milk, stirring to create a paste then gradually add the rest of the almond milk. Turn on the burner to medium-low heat, and when when mixture begins to steam, add the reserved cornstarch mixture.
Cook, stirring often, until mixture reaches a boil (2-5 minutes), then reduce heat and cook 5 minutes. Mixture will be thickened.
Pour into 2 ramekins or bowls. Cover with plastic wrap touching surface to avoid skin formation, or leave uncovered. Cool and chill thoroughly before serving
