Ingredients

2 Pounds Trout, Whole or Filleted
1 Can Diced Tomatoes with Green Chilies, 14.5oz
3 Tablespoons Lime Juice
1/2 Medium Onion
1 Tablespoon Garlic, Minced
3 Tablespoon Cilantro
1/2 Teaspoon Olive Oil
1/4 Teaspoon Black Pepper
1/4 Teaspoon Salt
1/4 Teaspoon Crushed Red Pepper
Add a couple sliced JalapeƱo peppers if you want more heat!
Directions
Preheat oven at 400 degrees F.
Rinse fish and pat dry. Place in baking dish.
In a separate dish, mix remaining ingredients together and pour over fish.
Bake for 20 to 25 minutes or until fork-tender.
Note: Since my boys and I like to fish so much we often have fresh whole trout around. I also skin all my fish. If you use fillets you will probably only have to bake for 15 minutes depending on how thick they are.
