Introduction

Chicken breasts stay juicy and healthy as they are baked rather than fried. Chicken breasts stay juicy and healthy as they are baked rather than fried.
Number of Servings: 4

Ingredients

    4 boneless, skinless chicken breast halves
    2 T light mayonnaise
    1/2 c dry seasoned bread crumbs
    1 T grated Parmesan cheese
    Non-stick cooking spray

Directions

Preheat the oven to 400 degrees F.
Mix crumbs and Parmesan cheese and place in a shallow dish.
Gently pound chicken to flatten slightly and to help ensure even baking. Spread light mayonnaise over the entire surface of the 4 chicken breast halves.
One at a time, lay chicken into the crumbs and turn to coat all sides. Press lightly to help the crumbs adhere.
Place chicken on a sprayed cookie sheet.
Bake at 400 degrees for 35 to 40 min until crumbs are lightly browned and juices run clear when you cut in the thickest part of the breasts.
Makes 4 servings.

    Quick to make, moist and delicious. I used corn flake crumbs instead of bread crumbs - EXTRA crispy. This recipe was enjoyed by everyone and will be made again. - 5/21/09

    This was SO good. I didn't have seasoned bread crumbs so I seasoned the mixture with onion powder, red pepper and dill weed (my favorite seasoning). I ate the chicken with cauliflower "mashed potatoes" and it was a great dinner! - 10/27/09

    My husband and I loved this recipe. I added a little garlic powder, onion powder and italian seasoning, and I grilled it in the George Foreman grill like someone else mentioned in their review. It was moist, lightly browned and tasted delicious. We will have this regularly. - 8/18/09
