Ingredients

    200 grams Zucchini
    .5 cup Tomato Sauce
    .5 cup Cheese, Mozzarella Cheese, Fat/Free, Shredded Kraft
    .5 cup Spinach, fresh
    6 oz Turkey, Ground turkey, 93% lean

Tips

if you leave it in the oven for more than 20 minutes, it gets softer.

Prep time does NOT include cooking ground turkey.


Directions

Preheat oven to 400 degrees.
Cut zucchini the long way down the middle. Scoop out the middle (I used a knife to cut a grid, and then scooped with a melon scoop). Take the excess zucchini and put it in a separate bowl.
Lay the outer zucchini on a baking sheet. Fill with cooked ground turkey.
In the separate bowl with the excess zucchini, add all tomato sauce, 1/4 cup of mozzarella cheese, and all chopped spinach. Mix well.
Add the contents of the separate bowl on top of the ground turkey in the "boat." Sprinkle the extra 1/4 cup of cheese.
Bake on 400 for 20 minutes.


Serving Size: makes 2 "boats"
