Introduction

This is a snack cake that is easy to make and great for company or picnics as the name implies. (It packs very well). This is a snack cake that is easy to make and great for company or picnics as the name implies. (It packs very well).
Number of Servings: 32

Ingredients

    1 cup, pitted, chopped Dates
    1 1/2 c. Boiling Water
    1 tsp Baking Soda
    1 c. Granulated Sugar
    3/4 c. Shortening
    1/2 c. Egg substitute
    1 c. Whole wheat f
    1/2 c plus 2 tbsp white flour
    1 tsp. Ground Cinnamon
    1/2 tsp Salt
    1 tsp. Vanilla Extract
    3/4 c. Packed Brown Sugar
    3/4 c. Semisweet chocolate chips

Directions

Put chopped dates into a bowl.
Pour boiling water over dates and all allow to cool, add 1 tsp. baking soda.
Combine sugar, shortening, and egg substitute together.
Add to date mixture.
Add wheat and white flour, cinnamon, salt, and vanilla. Mix well.
Pour into greased 9x13 pan.
Mix together brown sugar and chocolate chips.
Sprinkle over top of cake.
Bake for 40 minutes at 350.
Allow to cool. Cut into 32 pieces.
