Ingredients

    2.0 tbsp Curry powder
    2.0 tbsp Basil
    8.0 Chicken thighs, bone and skin removed
    1.0 head, medium (5-6" dia) Cauliflower, raw
    8.0 clove Garlic
    2 Tbsp Ginger Root
    1.0 large Onions, raw
    4.0 tbsp Cilantro, raw
    3.0 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
    1.0 tbsp chili paste
    1.0 red bell pepper

Directions

Cube chicken and chop onion, cauliflower, and cut 1 red bell pepper into thin strips and and add onions, peppers and cauliflower to the bottom of the crock pot then chicken then mix minced garlic minced ginger root curry powder chili paste and coconut milk. Pour over the chicken and stir. Cook on low 6 hours. Add chopped basil and cilantro and heat 30 more minutes. For paleo serve with cauliflower rice or regular rice if not. Serving Size: 1 to 1.5 cups
