Ingredients

    18 medium Shrimp, raw (1 pound)
    12 oz Barilla Rigatoni Pasta
    2 tbsp Butter, salted
    1/2 cup, finely sliced Onions, raw
    2 clove Garlic
    1/2 cup dry, white Wine
    1 cup Heavy Whipping Cream
    3 pickled Jalapeno Peppers, minced (1/4 cup before mincing) OR three Thai chili peppers; plus 1 tablespoon of the pickling liquid
    1 minced Peperocini
    1/2 cup Parmesan Cheese, grated

Directions

1. Prepare pasta according to directions. This will take as long as the following.
2. Melt butter and add onion and garlic and cook over medium heat until soft but not brown, about 3 minutes.
3. Add the wine and bring to a boil.
4. Boil wine mixture, uncovered, until wine is reduced to 1 tablespoon, about 4 minutes
5. Add the cream, chilies and peperoncini. Briskly simmer the mixture, uncovered, until reduced by one-third, about 5 minutes
6. Stir in the pickling liquid.
7. Add shrimp and heat until shrimp are cooked; Royal Reds only take a few minutes.
8. Add cheese at this time.
9. Remove from the stove and serve over choice of pasta.
