Ingredients

    1 1/2 cup Chicken Breast, cooked & shredded (or shredded rotisserie chicken)
    1 can Ranch Style Bean, mashed (or refried beans)
    1 cup Colby Jack Cheese, shredded
    24 Corn Tortilla
    2 tbsp Taco seasoning mix

Tips

*The filling will expand as the taquitos bake, so I recommend leaving at least a -inch gap between the filling and the edge of the tortilla before baking.

*For extra flavor, feel free to use shredded Pepper Jack cheese or another spicier cheese.


Directions

Preheat oven to 425 degrees. Mix all ingredients except for tortillas in a medium bowl, set aside. On a flat surface, place a spoonful of mixture onto tortilla and spread down center. Roll up the tortilla to form the taquito, then place it on nonstick baking sheet, seam-side down. Repeat with the remaining ingredients until all of your taquitos are prepared. Bake for 15-20 minutes, or until the tortillas are crispy.

Remove and serve immediately with guacamole, salsa and/or sour cream.
