This soup is highly addictive but depends on the quality of broth used. Only add soy sauce to taste in case your broth is very salty. Ingredients

1 onion, sliced into half rings
1.5 Tbsp olive oil
1 cup sliced mushrooms
1/4 tsp black pepper
1/4 tsp red pepper flakes
1L veggie broth
2 cups chickpeas, drained and rinsed
2 Tbsp lemon juice
3 Tbsp soy sauce (or to taste)
2 to 3 cups fresh spinach, stems removed
Directions
Saute onion in oil over medium-low heat until translucent. Add mushrooms, black and red pepper, and saute until mushroom liquid reduces. Add broth and chickpeas. Bring to a boil then reduce heat and simmer for 20 minutes. Stir in lemon juice, soy sauce, and spinach. Turn off heat, cover, and let sit for 3 or 4 minutes to wilt spinach.
