Introduction
A yummy chicken dish that uses orange juice thickened with cornstarch for the sauce. Additional flavors come from feta, walnuts and sundried tomatoes. Ingredients

16 oz. Penne Pasta
2 boneless/skinless chicken breasts
2 cups OJ
1/2 cup feta cheese
cornstarch (enough to thicken OJ)
1/2 cup walnuts
Fresh Basil to taste (I use lots)
1/4 cup sundried tomatoes (not in oil)
Directions
In a skillet, brown up and cook sliced chicken breast. When done set aside. Pour orange juice into pan and thicken with cornstarch and water until it is the consistency of a sauce. When thickened, add chopped fresh basil (I use a handful of basil) and the chopped sundried tomatoes. Add the cooked chicken pieces back in and cook until heated through.
Put cooked and drained penne pasta into a large shallow dish and pour sauce with chicken pieces over pasta.
Sprinkle the feta and walnuts over the top and serve. ENJOY!

I'm enjoying this dish for lunch today! I would never have thought of combining the flavors of orange and tomato and was amazed at how tasty they are together :) The feta & walnuts are a perfect compliment to the dish. I think this would be great over whole grain rice as well! My KUDOS to the Chef! - 6/30/08
