This has become a family favorite. To reduce the calories even more, use low fat feta, or simply leave the cheese out.
It can be served with your favorite corn chips, as a salad or side dish or even in a burrito. Use your imagination to dream up new ways to serve this wonderful dish.

Ingredients

    1 Can yellow corn, drained
    1 Can black beans, drained and rinsed
    1 Can Rotel Tomatoes, 1/2 juice drained
    1 Tbs ground cumin
    1 Tbs ground coriander
    1 Tbs ground cilantro
    1/2 C. crumbled feta cheese
    Juice of two limes

Directions

Drain and rinse the corn and black beans and combine in a serving dish. Add rotel tomatoes and remaining ingredients, stir and chill for at least 2 hours prior to serving.
