My husband's version of his German mother's recipe. I've seen similar recipes on the food channel that get way more complicated. This one is simple and has great, straightforward flavor. Ingredients

2 tsp Pepper, black
2 cup water
26 oz smoked turkey kielbasa
64 oz sauerkraut, rinsed and drained
60 oz potato raw
1 cup chopped red onion
2 Tbs light butter
Directions
- Scrub and dice potatoes to a uniform, small dice.
- Add potatoes and enough water to cover by 2 inches in a large stock pot. Bring the water to a boil. Reduce the heat to medium-high and simmer 20 minutes.
- While the potatoes are cooking, slice the sausage on the diagonal.
- Melt the butter in a small skillet. Add the sausage and brown 10 minutes.
Drain the sauerkraut and rinse well.
Drain the potatoes and return them to the stock pot. Add the browned sausage, sauerkraut, water and pepper.
Cook over medium heat 10 minutes, stirring occasionally.
Serving Size: makes eleven 2-cup servings
