Ingredients

    1 tsp diced garlic
    ¼ C chopped onion
    1 chopped jalapeño
    6 cups broth (I used 6 bouillon cubes with 6 cups water)
    2 boneless, skinless chicken breasts, chopped into bite-sized pieces
    1 can diced tomatoes
    ½ C fresh green beans cut into small pieces
    2/3 can black beans
    4 whole wheat tortillas

    Optional: 1/3 C shredded cheese per serving (not included in nutritional calculation)

Tips

If you use canned items and precooked chicken, you can cut the prep and cooking time down dramatically!


Directions

Stir garlic, onions and jalapeño into 2 cups of broth, bring to a boil. Stir in chicken, reduce heat, simmer until chicken is done, stirring often, about 15 minutes. Add tomatoes, simmer another 5 minutes, stirring often. Add the rest of the broth, the green beans and the black beans. Optional: stir cheese into soup until melted. Boil for 5 minutes. Cut tortillas into small pieces and stir into soup. Continue to cook until green beans are tender but still firm.

*Great topped with chopped avocado and tomato – I even stirred a little cottage cheese into mine!
