    1 stick butter
    1 c unsweetened applesauce
    1 c sugar
    2 eggs
    2 tsp lemon juice
    peel of lemon, grated
    2 c white flour
    2 c whole grain flour
    2 tsp baking powder
    1 tsp salt
    2 c grated zucchini
    1 c chopped walnuts


Preheat oven to 375. Spray cookie sheets with non-stick spray. Cream sugar, butter, and applesauce. Beat in the eggs, juice and peel. Stir in the flour and dry ingredients. Stir in the grated zuchinni and nuts. Bake 15 to 20 minutes, till golden brown. Can be glazed with 1/2 c of confectiners sugar mixed with 2 tsp. of lemon juice.

  • I love zucchini cookies & these are ok. I ended up adding cinnamon and vanilla to get more flavor and I also added raisins. FYI - The recipe produces a cake-like cookie. - 7/6/08
