Ingredients

    7 cup Wheat flour, white, bread, enriched
    1 cup Wheat bran, crude
    3 tbsp Canola Oil
    1 ounce Yeast, bakers
    3.5 cup (8 fl oz) Water, tap
    .25 cup Granulated Sugar
    1 tbsp Salt

Tips

You can make 4 bagettes instead of 2 large loaves. I am not sure the portion size for bagettes. Time for making this is hard to calculate, as the bread can be punched down several times and left to rise again. Prep time listed includes rise time for me, which may be different for others. I live at high altitude and things here rise faster. If you live at sea level you might only want 2 rise times, instead of the 3 that I do.


Directions

Mix yeast with water at 113 F degrees. Mix all ingredients and add flour slowly. Kneed for 10 min, and set to rise. Allow to rise 2 times, punching down dough each time. Punch down dough the final time all shape into loaves. Place loaves on greased large baking pans to rise. Pre heat oven to 350 F degrees. When loaves have almost risen to 2 times their size, put them in the oven to bake. Bake for 20-30 minutes until the loaves are golden brown. I rotate their shelf postions every 10 min because I only have 2 shelves.

Serving Size: Makes 2 very large loaves cut into 15 slices a loaf
