Ingredients

    3 cup Great Value Instant Brown Rice
    1 Med. Green Bell Pepper
    1 medium Onion, diced
    1 medium Carrots, shredded
    2 tbsp Extra Virgin Olive Oil
    1 cup, Mushrooms, sliced
    1 can Bush's Best Reduced Sodium Dark Red Kidney Beans, drain and rinse well.
    3 cup Swanson Chicken Fat Free Chicken Broth Less Sodium
    1/2 large Tomato, diced
    2 tablespoons Adobo Seasoning

Directions

In a large skillet heat olive oil. Add peppers, onions, carrots and mushrooms. Saute for about 3-4 minutes until peppers and onions are soft.
Add chicken broth, rice, kidney beans and adobo seasoning mix well. Bring to a boil. Cover and simmer for about 10 minutes until rice is soft. Mix in tomatoes, cover and let sit for about 5 minutes. Serve
